Thanks everyone.  Have consulted a biltong maker in Spain who says he uses contra, but will take your advice into account.  Much appreciated.

Pop into the Mediterraneo Supermarket in Zurgena...... they can get whatever cut of meat you want (or cut it there) and the prices are local "spanish" prices !!!! The meat counter is amazing for carnivores !!!!

If you like cheese, try the Pedro Ximenez ..... amazing !!!

Hi guys.
I need a big joint of silverside to make a South African treat...biltong.
I have looked on the net and it seems that 'contra con redondo or cuete de res â€" bottom round - is the cut.
Do you know if it's right, but if not, what is correct?
Please help...I am suffering from cultural withdrawal LOL  :grin: :cry:
