Almonds

Hi all, just wanting a bit of advice. We have been here two years now and have about 100 almond trees which we decided to let the local farmer carry farming, the first year he farmed them but this year he as just left them. My first question is, is this the norm just farming every other year? and my next question is, whats the average amount in € would you expect of each tree?  Tia
