Personally I find local potatoes quiet tasteless ,much prefer uk ones, we used to get ours from Kenny's but since he closed down have had to make do with those  we get from supermarkets and veg shops. Could be due to my ageing tastebuds!

Any potato will do if you twice fry them 1st fry at 160 for 6 minutes then remove from fryer and set fryer to 180 and fry chips again for 6 minutes or until browned this is for chunky chips works every time for me.

You can buy potatoes marked "FRIER" in Lidl, I bought some at the weekend.

Consum at Vera have the potatoes that are marked either for chips , or for mashing.
Hope this helps.

Where can I buy decent potatoes for chips?  Crisp on the outside and soft on the inside.  I have tried all the supermarkets but none come up to scratch, whatever you do they still go soggy.  Maris Piper were the best, also Coviran in Arboleas used to sell potatoes marked whether they were friers or boilers.
