Marinade them in either amaretto or cointreau in a sealed jar - delicious and they last for ages

You have just got to make apricot chutney. Dead easy, lasts ages and is just wonderful with curry or pâté

I have just been given a fruit/veg drier still experimenting but guess a fan assisted oven would do the same job here in the Uk, maybe you could sun dry your apricots out there in Sunny Spain!!!along with any surplus figs etc beats Holland & Barrets prices!
